Tikka Masala

You will need:

-One can coconut milk or coconut cream (about 14-16oz)

-1/2 cup diced tomato

-1/2 tbsp butter or oil of choice

 

Optional:

-Freshly diced vegetables like bell peppers, mushrooms, or peas

-One cup protein like cooked meat or tofu

 

Directions:

1. Add 1/2 tbsp butter or oil, 1/2 cup diced tomato, and package contents to wok or deep pan and heat over medium-high heat until tomato becomes like a paste.

 

2. Add can of coconut milk and bring to a simmer. Add veggies  of choice and allow to simmer more for 7-10 minutes or until veggies are soft.

 

3. Add pre-cooked protein of choice if desired and serve over rice.
